Kinda Baked Salmon

Because I love cooking and I'm always posting little snippets of myself cooking on social media, I usually get a good amount of recipe requests. I am putting together some of my favorite recipes for y'all. I have recorded and plan on recording a couple of "tutorials", and will also post recipes on here so y'all have all the deets. Here is the first one: Kinda baked salmon.


Ingredients:


1 packet of sazon (the orange/pink one)

1 tbs of Grace Fish and Meat Sauce

A dash of Old Bay Seasoning

A dash of adobo

2 tbs of butter or margerine

Two stick of rosemary leaves (or a dash if you buy it in a bottle)

Hot Pepper (optional), I usually go for scotch bonnet peppers cause its maaaad hot.

A little oil of your choice (for frying)

2 cloves of garlic

1 small onion

1 ripe tomato

1lemon, or lime, or lime lime juice

**Full disclaimer: when I say "dash" I mean to use your digression, I honestly kinda just sprinkle the seasonings on there and let the ancestors guide me. Don't worry though, it may be too salty, or not salty enough the first few times, which is okay. As you practice, like I know you will, you will find that sweet spot. Just keep cheffing it up.


Instructions:


Aight so boom:

1. Rinse salmon with lime/lemon or lime/lemon juice and cold water


2. Let salmon drain for 5-10 minutes (this is important because it helps the seasons to marinate better)


3. Finely chop garlic (about two large cloves), slice onions (a small one) and tomatoes (a small one)


4. Add:

Old Bay

Sazon ( 1packet

Adobo (not too much, its a bit salty)

chopped garlic and onions

rosemary leaves about one piece

5. Use large spoon to mix seasonings in.and let it marinate in the fridge for at least an hour


6. Lightly fry Salmon to add a little color, a ew minutes on each side


7. Heat oven to 350, bake salmon for about 15-20 minutes


8. Carefully put salmon into a pot and add: about 2-4 oz of water, the butter, fish and meat sauce, the chopped tomatoes and whatever oil was left from "browning" the salmon.

Let this simmer on a very low heat for about 15 minutes, or until gravey is to your desired thickness. Don't worry, it wont be as thick as I am, that's okay.
